Cheese Calzones (makes 1 large calzone or 4 individual)

1 pkg. dry yeast
3/4 c. very warm water (120-130 degrees)
2 c. flour
1 tsp. salt
1 tsp. sugar
Preheat oven to 450 degrees. Soak yeast in water for 5 minutes. Add flour, salt and sugar and mix to blend. Knead for 2-3 minutes until flour is well blended. Cover and let rise in a warm place for 15 minutes. 


½ teaspoon: dried basil or fresh

½ Cup: Ricotta cheese

1 egg

1 ½ Cup: Mozzarella cheese, cut

Salt & pepper


$11.      Combine the ricotta cheese, basil leaves, egg and mozzarella. Mix well, cover bowl and refrigerate to chill.

$12.      Preheat oven to 375 degrees F (190 degrees C).

$13.      Separate the dough into individual pieces.  Roll into thin circles on a lightly floured surface. Fill each circle with the cheese filling and fold over, securing edges by folding in and pressing with a fork. Brush the top of each calzone with oil, cut a slit on the top and place on a lightly greased cookie sheet.

$14.      Bake at 375 degrees F (190 degrees C) for 30 minutes. Serve hot.

Tomato Sauce:

1 (28 ounce) Can: diced tomatoes

2: Garlic cloves

½ : onion, chopped

1 tablespoon: olive oil

½ teaspoon: dried oregano

$11.      Heat the oil in a pan. Sautee the onion and garlic. Add the tomatoes and dried oregano. Bring to a boil and serve with calzones.
