Hawaiian Skillet Chicken

  • 4 Boneless, skinless chicken breasts (about 6 oz. ea.)
  • 2 tbsp. Olive Oil
  • 1 can (about 2 cups) pineapple rings, in juice diced
  • 1/4 C. brown sugar
  • 3 tbsp. soy sauce
  • 1/4 tsp. paprika
  • 1 tsp. ground ginger
  • 1/2 tsp. kosher salt
  • 1 tbsp. flour

Cut chicken in to bite size pieces, flour salt and pepper, add to pan and saute for 4 mins on one side. Turn over and saute 2 to 4 mins more until nicely brown on both sides. Remove from pan and set aside. Sauce: add the diced pineapple and with the juice, brown sugar, soy sauce,ginger,cloves paprika and salt. Return the pan to the stove and stir for 1 min. Add the tablespoon of flour and continue to heat the sauce, stir to collect remaining juices and brown bits from pan and allowing sauce to thicken.. pour over chicken and serve with rice

Vegetable Fried rice

  • 1 cup instant brown rice
  • 1 cup vegetable broth
  • 2 eggs, lightly beaten
  • 2 teaspoons olive oil
  • 6 broccoli 1-inch pieces
  • 1 medium red bell pepper, thinly sliced into 1-inch pieces
  • 4 scallions, cut into 1-inch pieces
  • 1 clove garlic, minced
  • 1 tablespoon minced fresh ginger
  • 4 teaspoons reduced-sodium soy sauce
  • 2 tablespoons rice vinegar
  • 1 teaspoon toasted sesame oil

Combine rice and broth in a small saucepan. Bring to a boil over high heat. Cover, reduce heat and simmer until the liquid is absorbed, 12 to 14 minutes. Spread the rice out on a large plate and let stand for 5 minutes.
While the rice is cooling, coat a large nonstick wok or skillet with oil and place over medium heat. Pour in eggs and cook, stirring gently, until just set, 30 seconds to 1 minute. Transfer to a small bowl.
Heat canola oil in the pan over medium-high; Add diced bell pepper, broccoli, scallions, garlic and ginger; cook, stirring, until the vegetables are just tender, about 2 minutes. Add the cooked rice, soy sauce and vinegar to the pan; cook until the liquid is absorbed, 30 seconds to 1 minute. Fold in the cooked eggs. Remove from the heat; stir in sesame oil.
